Zesty Hummus

Ingredients

  • 1 can (400g) chickpeas, drained and rinsed
  • 2 tbsp tahini
  • 2 tbsp extra-virgin olive oil (plus more for drizzling)
  • 1 clove garlic, minced
  • 2 tbsp fresh lemon juice (adjust to taste)
  • 1/4 tsp ground cumin (optional)
  • Salt to taste
  • 2–3 tbsp water (to adjust consistency)
  • Toppings – Blue Banner Sliced Red Pickled Onions, cherry tomatoes, cucumber, feta cheese, olives, parsley

Method

  1. Prepare the Base:
    Place the drained chickpeas, tahini, olive oil, garlic, lemon juice, and cumin (if using) into a food processor or blender.
  2. Blend Until Smooth:
    Process the ingredients until smooth, gradually adding water (1 tablespoon at a time) to achieve your desired consistency.
  3. Season to Taste:
    Add salt to taste and adjust lemon juice or garlic as needed for flavour balance.
  4. Serve:
    Transfer the hummus to a serving bowl, drizzle with olive oil, and garnish with your favorite toppings – Blue Banner Sliced Red Pickled Onions, cherry tomatoes, cucumber, feta cheese, olives, parsley
