Dressing Ingredients
- 1/2 cup extra-virgin olive oil
- 1/4 cup Dijon mustard
- 3 tablespoons honey (adjust sweetness to your liking)
- 2 tablespoons lemon juice
- 2 tablespoons Blue Banner pickled onion vinegar from the jar
- ½ teaspoon fine sea salt
Salad Ingredients
- 1/2 avocado
- 1/2 cup chickpeas
- 1/2 cup mixed tomatoes
- 1/4 cup shredded carrots
- 1/2 cup spinach
- 3 pcs Blue Banner Original Pickled Onions cut in quarters
- 1/2 cup Cannellini beans
- 1/2 tsp sesame seeds
- Sea salt and freshly ground black pepper
Method
- Combine the salad dressing ingredients in a small container and give it a good mix.
- Place the avocado, chickpeas, tomatoes, shredded carrots, spinach, Blue Banner Original Pickled Onions, cannellini beans in a bowl.
- Sprinkle salt and freshly ground black pepper
- Top it off with sesame seeds
