Ingredients
1 cup shredded red cabbage
1 cup shredded white cabbage
1 large carrot, grated or julienned
2 cups mixed salad greens (baby spinach or rocket)
1/2 cup Blue Banner Pickled Onions, sliced or whole (your preference)
2 tablespoons fresh parsley or coriander (optional)
Dressing:
3 tablespoons olive oil
1 tablespoon of the pickled onion vinegar (for extra tang)
1 teaspoon honey or maple syrup
Salt and pepper to taste
Method:
In a large bowl, combine red cabbage, white cabbage, carrot, and mixed greens.
Add sliced Blue Banner Pickled Onions for a burst of flavour and colour.
In a small jar or bowl, whisk together the dressing ingredients.
Pour dressing over the salad and toss to combine.
Garnish with fresh herbs if desired. Serve immediately.
